There’s something about early fall mornings that makes me crave calm. Maybe it’s the darker skies, the cooler air, or that small shift where your body starts asking for rhythm and nourishment over speed and convenience.
This is one of my favorite breakfasts for that season…the kind you can make the night before and grab in the morning when everything else feels rushed. It’s light but filling, simple but nutrient-packed, and tastes like a brighter version of a classic blueberry muffin.
And unlike most quick breakfasts, this one doesn’t send you crashing an hour later. It balances blood sugar, supports your gut, and gives your mitochondria what they need to actually make energy (instead of just borrowing it from caffeine).
I actually like to make 3-4 of these at a time so they’re ready to go for a chunk of the week!
